Categorization of Shaoxing Yellow Rice Wine (1)

Shaoxing Yellow Rice Wine is classified according to the sugar content into four categories, i.e., Yuanhong , Jiafan (Rice-adding), Shanniang and Xiangxue.

Yuanhong is a kind of dry wine. It is fully fermented and low in sugar content. The liquid is orange, transparent and shiny. With a peculiar strong fragrance, the wine tastes ripe and refreshing. Its alcoholic content is no less than 13.0% Vol, total sugar content is no more than 15.0 g/L, and total acid content is 4.0~7.0 g/L.
