VII. Storage

Japanese Rice Wine is preserved at 5~7C for from half a year up to one year. After a summer, the wine with mellow taste is regarded as good wine.

Shaoxing Yellow Rice Wine has to be stored in a cool and well-ventilated room. It has no strict requirements on the temperature change. Instead, it has to be preserved for more than three years. Such big companies as Gu Yue Long Shan carry on this tradition, and keep in storage old wine for three years, five years, ten years and even more than fifty years. Its stock comes up to 240,000 tons. As a result, the quality and flavor of the wine can be guaranteed.

As to the storage of wine, the Japanese prefer fresh and new wine, while the Chinese prefer mellow and pervasive wine.
