In Shaoxing, there are different names of wines made from glutinous rice. The shelf life of the home-made Huangjiu is generally short and the wine can be enjoyed just after brewing. Thus, the home-made Huangjiu is called the "new wine". And the boiled Huangjiu is less likely to deteriorate, and the flavor and taste will be improved as the years roll on if it is filled in the pottery jar.
