II. Raw Material Processing

The requirement for the raw material of Shaoxing Yellow Rice Wine is cleaning and winnowing.

The requirement for the raw material of Japanese Rice Wine is grinding before cleaning, to get rid of the protein and fat in the rice and make the rice whiter. Usually,25~30% of each rice grain has been ground away (It is generally accepted that the yeast has to be made with rice with a Seimai Buai of 70% or more, meaning at least the outer30% or more has been ground away, while the rice for fermenting must have a Seimai Buai of at least 75%, meaning that the outer 25% or more has been polished away).
