The flavors of Shaoxing Huangjiu

Then, how many flavors does Shaoxing Huangjiu have? Director Qian Bin said that high-quality Shaoxing Huadiao Jiu (Jiafan Jiu) mainly has six tastes. And the wine is sweet but not greasy, slightly bitter and sour but delectable.

Sweet: The sugar (mainly glucose and maltose) produced by enzymatic hydrolysis of high-quality rice and wheat starter makes Shaoxing Huangjiu taste mellow, sweet and thick.

Sour: There are more than 10 kinds of organic acids in Huadiao Jiu, such as acetic acid, lactic acid, succinic acid and so on, which make the wine taste sweet, refreshing and mellow.

Spicy: The alcohol and higher alcohols make the wine taste spicy. Moderate spicy taste can enhance the appetite. Otherwise, the wine will be tasteless.

Bitter: The amino acid, amine and other components make the wine taste bitter. And the moderate bitterness makes the wine taste fresh and special.

Fresh: The glutamic acid, aspartic acid, lysine and other components make the wine taste fresh. The freshness is unique to Huangjiu, and the freshness of Shaoxing Huangjiu is more obvious than other kinds of Huangjiu.

Astringent: The astringency and bitterness of Shaoxing Huangjiu are produced at the same time. It is mainly caused by lactic acid and other components. The appropriate astringency and bitterness can make the wine taste soft.
