Why is Huangjiu a kind of national fermented wine? (2)


What is Huangjiu? In my opinion, Huangjiu is a kind of national fermented wine. Just now, Shi Zhenhong, the general manager of Red Dot Design, said that Huangjiu is a kind of national wine. Huangjiu is certainly a kind of national wine. However, I think we should call it a kind of national fermented wine. Maotai is a kind of national wine. Huangjiu is different from Chinese Baijiu, because Chinese Baijiu is a kind of distilled liquor, and Huangjiu is a kind of fermented wine. Therefore, Shaoxing Huangjiu should be called a kind of national fermented wine, which can fully reflect the essential characteristics of Huangjiu.

I've been calling for this view since 2008. On September 19 of that year, the Hong Kong Sunshine Satellite TV came to Shaoxing to make China's first high-definition film with the theme of Huangjiu, called "Water Guest". At the opening ceremony, they invited me to make a speech, which was later compiled as the "Praise of Huangjiu" and included in Language of Yue State published by Zhonghua Book Company. In this article, I clearly put forward the view that Huangjiu is a kind of national fermented wine. However, the view is too cultured to be appreciated by the masses. On March 6, 2019, when I visited Gu Yue Long Shan, I also called for this view. However, I still felt that it was not completely utilized.

Why do I insist on calling Shaoxing Huangjiu a kind of national fermented wine? There are three main reasons.

Firstly, Shaoxing Huangjiu has a long history. At the beginning of 2006, the State Administration of Cultural Relics announced the "top ten new archaeological discoveries in China" in 2005. The Xiaohuangshan site in Shengzhou, Shaoxing was on the list. In this site, the rice and pottery made by our ancestors 10000 years ago were found. Rice is the most basic raw material for the production of wine. And pottery makes me fall into a reverie. I even think that ten thousand years ago our ancestors might drunk with pottery, and then they got drunk. Therefor, the word intoxication is probably related to wine.

According to this view, Shaoxing Wine making may have a history of more than 10000 years. However, this view is only based on analysis and speculation, and there is no written basis. Therefore, we have another statement. According to the literature, 4000 years ago, Dayu, our hero of water control, the founder of our country, and the holy king of China, issued a ban on alcohol.

2500 years ago, our great king of Yue State, Goujian, gave full play to the function of wine. For example, Goujian used alcohol to encourage childbirth. It is recorded in the literature as follows: two jugs of wine and a dog are awarded for giving birth to a boy; two jugs of wine and a pig are awarded for giving birth to a girl. It can be seen that at that time, the policy of encouraging childbirth was very good. In addition, the literature also records that "when a pregnant woman is about to have a baby, she should report to the government, and the government will specially send someone to take charge of the delivery and other related matters. If you have three children, the government will send a nurse. If you have two children, the government will provide food for you. Now our government has introduced the two-child policy, but it seems that people's enthusiasm for childbearing is not very high. I think the government must be studying further policies to encourage childbirth. In fact, Goujian had set a good example for us.

For another example, Goujian used wine to motivate his soldiers. He poured wine into the Toulao River to let his soldiers drink together to boost their morale. At last, they defeated the Wu State and dominated the Central Plains. It can be described as a pot of wine can prosper the country. Today, the Toulao River is still preserved in the ancient city of Shaoxing, witnessing the great aspiration of Goujian and his soldiers 2500 years ago.

I want to review this period of history with you to show that Shaoxing wine industry is accompanied by Chinese civilization. The history of Shaoxing wine is equal to half of the history of Chinese civilization. Shouldn't this kind of wine be called a kind of national wine?

Secondly, Shaoxing Huangjiu is only available in Shaoxing. Shaoxing Huangjiu has three unique features.

Firstly, the raw materials of Shaoxing Huangjiu are unique. The most basic raw materials of Shaoxing Huangjiu are Shaoxing water and glutinous rice. Shaoxing water is the water in the Jianhu Lake which is the sacred water for brewing Shaoxing wine. Last night, looking at the program of today's activity, I learned that the headquarters of Red Dot Design is in Xiamen, Fujian. Let me give an example of the relationship between Shaoxing wine and Jianhu water.

Liang Zhangju was born in Fuzhou during the reign of Emperor Qianlong in Qing Dynasty. He was a great statesman, a colleague with Lin Zexu, a firm anti-British and anti-smoking official, and a great scholar. He wrote a book called A Continuation of the Waves, in which there was an article about Shaoxing Huangjiu. And the article talked about the unique features of Jianhu water. Shaoxing wine in circulation in China now is the most authentic wine. The water in Shanyin and Kuaiji is most suitable water for making wine. The wine made in other place is not very good. Shaoxing wine which is made by Shaoxing people in other places in the same way tastes bad because the water is different. It turns out that Shaoxing wine can circulate in China because Shaoxing water is the most suitable water for making wine. The view makes a lot of sense. Mr. Liang Zhangju has never lived in Shaoxing, has no relationship with Shaoxing and has no personal feelings of putting forward this view. Therefore, it can be seen that his view is objective and fair.

Another important raw material of Shaoxing wine is Shaoxing glutinous rice. Shaoxing wine was popular at that time because of Jianhu water and Shaoxing glutinous rice. Shaoxing glutinous rice is not ordinary glutinous rice, but the glutinous rice cultivated by Shaoxing people in thousands of years of optimization and improvement, which grows on the most suitable soil in this area. It is unique in its high starch content, strong viscosity, easy cooking and fermentation, and high wine yield.

The combination of special water and glutinous rice makes Shaoxing wine unique in the world.

Secondly, the technology of Shaoxing wine is special. The brewing and processing technology of Huangjiu, which is a national intangible cultural heritage, is improved in hundreds of years of practice, .

Thirdly, the brewing time of Huangjiu is special. For thousands of years, the beginning of winter is the sacred moment of Shaoxing Huangjiu. And the combination of Shaoxing water, glutinous rice and the special brewing time is magical. Wine made in the beginning of winter is the best wine. It is the wine that absorbs the essence of heaven and earth.

The beginning of winter is the best time of brewing. The water and glutinous rice which grow in the ancient Yue land are the right raw materials. The technology of Shaoxing wine is the crystallization of wisdom. Therefore, Shaoxing wine is a perfect combination of timing, location and people. Shaoxing wine is accompanied by Chinese civilization. Therefore, Shaoxing wine is the epitome of Chinese excellent traditional culture. The history, raw material composition, brewing and processing of Shaoxing wine involve the knowledge of Confucianism, chemistry, geography, physics, astronomy and humanities, etc. Therefore, Shaoxing wine is an encyclopedia.

Thirdly, Shaoxing Huangjiu is good for health. The greatest pursuit of life is not status and money, but health, which has been the case all over the world. People don't want to be in poor health and have a short life span, even if they have a lot of money and a lot of power. Shaoxing wine is good for health.

Shaoxing wine has unique health care function. Rich amino acids, protein, vitamins and other ingredients are very beneficial to people's health. Why does Shaoxing become the hometown of celebrities? In addition to the material basis of the land of fish and rice, and the fine tradition of farming and reading, the important reason is that Shaoxing wine has a unique health function. The function has penetrated into Shaoxing people's genes and blood. Of course, in addition to Shaoxing wine, there are Shaoxing doctors and medicinal materials, which are not available in other places. They also effectively protect the health of Shaoxing people.

He Zhizhang, a native of Shaoxing in Tang Dynasty, lived 85 years. Lu You, a great poet of the Song Dynasty, was also a native of Shaoxing. And he lived for 86 years. Both of them lived more than a thousand years ago. More than 1000 years ago, it was very rare to live to 85 or 86 years old. Even now, there are few people who can live to such a great age. It has something to do with their love of Shaoxing Huangjiu. The life expectancy of Shaoxing people last year was about 82 years old. According to the current growth rate, it will take another 20 years before the country's life expectancy reaches 82 years. I think this has a lot to do with Huangjiu.

Huangjiu is not only good for health, but also good for self-cultivation. When you are happy, Huangjiu can liven things up. When you are sad, Huangjiu can remove your afflictions. The family affection and friendship is deeper with age. Likewise, Shaoxing Huangjiu is more fragrant with age.

Shaoxing Huangjiu has a history of thousands of years and is a delicious national wine. The sages and common people all love Huangjiu. And all of them will be overjoyed after drinking it. I think that's why people like Shaoxing wine for thousands of years.
